"Premium" beef tartare

Ingredients for 6 people

1.5kg beef rump steak

1 anchovy fillet per person

1 egg yolk per person

2 onions, thinly sliced

2 shallots, thinly sliced

8 ​​gherkins, thinly sliced

1 handful of chopped capers

5 tbsp mustard

6 tbsp ketchup

6 tbsp Worcestershire sauce

4 tbsp vinegar

8 tbsp oil

Tabasco to taste

Parsley, chives

Salt, pepper

 

 

Method

Cut the meat into small cubes with a knife.

Mix all the ingredients of the sauce.

Add the sauce to the meat only once just before serving.

Accompany the tartare with toast, butter and roast potatoes as well as a green salad.
